Divine Soup

Don made dinner lentil soup with curried brown butter.  Since in theory we are still doing the detox we couldn't use we substituted olive oil.  And of course, it was not served with bread, but with heavenly roasted veggies from our Bountiful Basket this weekend. 

Green lentils are split peas, I think.  Or you can use them interchangeably.  I can tell you that what I bought I thought were split peas in the bulk section at New Frontiers.  I've been trying to find a split pea soup recipe that a) did not include ham (Kendall doesn't eat pork) & b) didn't suck.  This soup was so damn good!  I can only imagine that it would be ever better with the butter!  And a big hunk of rustic bread.  It has curry & coconut milk in it...something Don & I are coming to really like.  Kendall took 2 bites & decided it was not for her.  But I loved it!  I'm already looking forward to the next time we have it!
